  • 1/2 ozFresh Lime Juice

  • 1 dashAngostura Aromatic Bitters

  • 4 ozFresh Pineapple Juice
    Fresh pineapple
    Substitute: Quality canned acceptable
  • SplashSoda Water
    To top
    Substitute: Club soda
  • 1/2 ozCherry Heering
    Danish cherry liqueur essential
    Substitute: No substitution for authentic recipe
  • 1/4 ozBenedictine
    Herbal liqueur
    Substitute: DOM Benedictine
  • 1/4 ozCointreau
    Orange liqueur
    Substitute: Triple sec acceptable
  • 1 1/2 ozGin
    London Dry gin
    Substitute: Plymouth gin acceptable
  • 1/4 ozGrenadine
    Real pomegranate grenadine
    Substitute: Homemade preferred

Instructions

  1. Add 1 1/2 oz gin, 1/2 oz Cherry Heering, 1/4 oz Benedictine, 1/4 oz Cointreau to shaker
  2. Add 4 oz fresh pineapple juice, 1/2 oz fresh lime juice, 1/4 oz grenadine, and 1 dash Angostura bitters
  3. Fill with ice and shake vigorously
  4. Strain into Collins glass filled with ice
  5. Top with splash of soda water
  6. Garnish with pineapple wedge and cherry

Technique Notes

Soda last and only a splash. This is already a seven-ingredient build and it goes watery faster than it looks like it will.

Why the Singapore Sling Works

Gin and pineapple is the spine; Cherry Heering, Bénédictine, and Cointreau each contribute a different kind of sweetness (cherry, herbal, citrus). Lime cuts, grenadine tints and slightly sweetens, Angostura ties the herbal and the fruit together. A drink built like a tiki but constructed like a colonial-era highball.
