- Add 2 oz white rum, 3/4 oz fresh lime juice, 1/2 oz simple syrup and 3 dashes Angostura bitters to a shaker
- Fill with ice and shake vigorously
- Strain into a chilled coupe
- Garnish with a lime wheel
Technique Notes
The classic build has no bitters. Angostura adds them to its own version, and they dry the finish and put a little spice under the lime. Angostura uses its 1919 rum; any good white rum works. Shake hard and serve at once, since a drink this small warms quickly.
Why the Daiquiri Works
Lime and sugar are only the frame of a daiquiri, so the rum and the bitters decide how it tastes. Aromatic bitters put cinnamon and clove under the lime and pull the finish drier, where a plain daiquiri ends on sugar.
