  • 3/4 ozFresh Lime Juice
    Fresh squeezed
    Substitute: Key lime
  • 3/4 ozGrapefruit Juice
    Fresh squeezed
    Substitute: Pink grapefruit
  • 2 dashesAngostura Aromatic Bitters
    Classic spice warmth
    Substitute: Orange bitters
  • 1 ozDark Rum
    Jamaican rum
    Substitute: Demerara rum
  • 1 ozLight Rum
    Cuban-style rum
    Substitute: Puerto Rican rum
  • 1 ozDemerara Rum
    Guyana rum
    Substitute: Barbados rum
  • 1/2 ozHoney Mix
    Honey and water 1:1
    Substitute: Demerara syrup acceptable

Instructions

  1. Add 1 oz dark rum, 1 oz light rum, and 1 oz Demerara rum to shaker
  2. Add 3/4 oz fresh lime juice, 3/4 oz grapefruit juice, 1/2 oz honey mix, and 2 dashes Angostura bitters
  3. Fill with ice and shake vigorously
  4. Strain into tiki mug filled with crushed ice
  5. Garnish with mint sprig

Technique Notes

Use honey mix rather than neat honey. Straight honey seizes on contact with cold citrus and sits in a lump at the bottom of the glass.

Why the Navy Grog Works

Three rums layered for depth (light, dark, demerara), citrus on two axes (lime sharpness, grapefruit bitterness), and honey mix (diluted honey) to bind it all without crystallising. Angostura ties the rum funk to the citrus by adding the same warm spice that the rums already carry from oak.
