  • 2 dashesAngostura Bitters
    Classic aromatic bitters
    Substitute: Peychaud's for variation
  • 1 tspMaraschino Liqueur
    Luxardo Maraschino
    Substitute: Essential ingredient
  • 1 tspAbsinthe
    Quality absinthe
    Substitute: Herbsaint acceptable
  • 2 ozRye Whiskey
    Use quality rye whiskey
    Substitute: Cognac for historical variation

Instructions

  1. Add 2 oz rye whiskey, 1 tsp maraschino liqueur, and 1 tsp absinthe to mixing glass
  2. Add 2 dashes Angostura bitters
  3. Fill with ice and stir until well chilled
  4. Strain over fresh ice in old fashioned glass
  5. Express lemon peel oils over drink and garnish

Technique Notes

A bar spoon of absinthe, no more. It is there to lift the nose, and past that it takes over the entire drink.

Why the The Improved Cocktail Works

An "improved" Old Fashioned — maraschino and absinthe added to the basic spirit-sugar-bitters formula. Maraschino's stone-fruit sweetens differently from sugar (rounder, more aromatic), and the bar-spoon of absinthe lifts the spirit's nose with anise. The result is a drink with the structure of the original but more dimension.
