
Rabbit Fernet
Two fernets, lemon and strawberry syrup over crushed ice
Ingredients
- 3/4 ozLetherbee FernetThe savoury one, rhubarb root and colaSubstitute: Another American fernet
- 3/4 ozFernet-BrancaThe mentholated one, for the contrast
- 3/4 ozLemon JuiceFresh
- 3/4 ozStrawberry SyrupThe creator infuses it sous vide; a stovetop syrup works
Instructions
- Add 3/4 oz Letherbee Fernet, 3/4 oz Fernet-Branca, 3/4 oz lemon juice and 3/4 oz strawberry syrup to a shaker
- Shake with crushed ice
Crushed rather than cubed; the drink needs the extra dilution
- Strain into a rocks glass filled with fresh crushed ice
- Garnish with slices of orange and strawberry
Technique Notes
Crushed ice, and shake with it rather than on cubes. The strawberry syrup and the lemon are carrying an ounce and a half of fernet between them, and the drink needs the extra dilution a crushed-ice shake gives it to land as a sour rather than a challenge.
Why the Rabbit Fernet Works
Fernet-Branca is menthol and saffron; Letherbee is rhubarb root and something closer to cola. Putting them in equal measure makes the gap between them audible, and strawberry is the only sweetener soft enough to sit under both without picking a side.
