Ingredients

  • 2 dashesAngostura Aromatic Bitters
    Traditional aromatic spice
    Substitute: Dutch bitters if available
  • 1 wholeEgg
    Fresh whole egg
    Substitute: Aquafaba alternative
  • 2 ozDutch Genever
    Traditional Dutch juniper spirit (jonge or oude)
    Substitute: No substitution recommended
  • 1/2 ozSimple Syrup
    Rich simple syrup
    Substitute: Demerara syrup

Instructions

  1. Add 2 oz Dutch genever, 1/2 oz simple syrup, and 1 whole egg to shaker
  2. Add 2 dashes Angostura aromatic bitters
  3. Dry shake vigorously without ice

    Essential for emulsification

  4. Add ice and shake again vigorously
  5. Double strain into chilled small coupe glass

    Pre-chill glass

  6. Garnish with freshly grated nutmeg creating aromatic crown

Technique Notes

Dry shake until the shaker feels light, then add ice. A whole egg needs longer than a white to come together, so give it more time than a sour.
