Instructions
- Add 2 oz Dutch genever, 1/2 oz simple syrup, and 1 whole egg to shaker
- Add 2 dashes Angostura aromatic bitters
- Dry shake vigorously without ice
Essential for emulsification
- Add ice and shake again vigorously
- Double strain into chilled small coupe glass
Pre-chill glass
- Garnish with freshly grated nutmeg creating aromatic crown
Technique Notes
Dry shake until the shaker feels light, then add ice. A whole egg needs longer than a white to come together, so give it more time than a sour.
Why the Amsterdam Flip Works
A flip is built on the egg providing both body and richness, and genever's malted-grain warmth flatters the egg's eggy-ness more than a London Dry would. Angostura's clove and cinnamon read as Christmas-spice in the foam, and the small amount of simple syrup binds the texture.
