  • 1 1/2 ozAmaro di Angostura
    The base, cinnamon and liquorice under dark chocolate
    Substitute: Another spice-led amaro
  • 3/4 ozAromatic Bitters
    Measured, not dashed; this is the unusual part
  • 1 ozLime Juice
    Fresh, and carrying the whole sour side
  • 1 ozSimple Syrup
    A full ounce; there is a lot of bitterness to answer

Instructions

  1. Add 1 1/2 oz Amaro di Angostura, 3/4 oz aromatic bitters, 1 oz lime juice and 1 oz simple syrup to a shaker
  2. Fill with ice and shake hard
  3. Double-strain into a chilled coupe

    Double, not single; there is a lot of botanical sediment here

  4. Garnish with a lime twist

Technique Notes

Double-strain this one. Three quarters of an ounce of aromatic bitters is a great deal of botanical sediment for a drink served up, and a single strain leaves it visible against the pale rim of a coupe.

Why the Amora Amaro Works

A dash of aromatic bitters is a seasoning; three quarters of an ounce is an ingredient, and it behaves like one. The clove and cinnamon that normally sit under a drink come to the front here, and the full ounce of syrup exists because they have to be answered.
