  • 3/4 ozFresh Lime Juice
    Fresh squeezed
    Substitute: Key lime
  • 3 dashesAngostura Bitters
    Aromatic complexity
    Substitute: Trinidad Scorpion
  • 2 ozFresh Pineapple Juice
    Fresh pineapple
    Substitute: Quality canned
  • 1 ozLight Rum
    Cuban-style rum
    Substitute: Puerto Rican rum
  • 1 ozDark Rum
    Jamaican rum
    Substitute: Demerara rum
  • 1/2 ozOrgeat Syrup
    Almond syrup
    Substitute: Amaretto + simple

Instructions

  1. Add 1 oz light rum, 1 oz dark rum, 2 oz fresh pineapple juice, 3/4 oz fresh lime juice, and 1/2 oz orgeat syrup to shaker
  2. Add 3 dashes Angostura bitters
  3. Fill with ice and shake vigorously
  4. Strain over fresh ice in punch cup
  5. Garnish with pineapple wedge and cherry

Technique Notes

Strain over fresh ice rather than the shaking ice. The ice you shook with is already spent and will water the drink down twice.

Why the Tropical Bitters Punch Works

Pineapple and orgeat both bring sweetness with body: pineapple's enzymatic brightness, orgeat's almond fat. Rum sits comfortably in the middle. Angostura pushes the drink past tropical-sweet into something with aromatic backbone, the spice anchoring the otherwise candy-leaning fruit.
