  • 3/4 ozFresh Lemon Juice
    Fresh squeezed
    Substitute: Meyer lemon
  • 2 dashesAngostura Orange Bitters
    Adds citrus complexity
    Substitute: Regans' Orange No. 6
  • 1 wholeEgg White
    For texture and foam
    Substitute: Aquafaba vegan
  • 2 ozGin
    London Dry gin
    Substitute: Plymouth gin
  • 1/2 ozGrenadine
    Real pomegranate grenadine
    Substitute: Homemade grenadine

Instructions

  1. Add 2 oz gin, 3/4 oz fresh lemon juice, and 1/2 oz grenadine to shaker
  2. Add 1 egg white and 2 dashes orange bitters
  3. Dry shake vigorously without ice

    Essential for foam

  4. Add ice and shake again vigorously
  5. Double strain into chilled coupe glass

Technique Notes

Dry shake hard enough that the shaker feels light before the ice goes in. That first shake sets the foam; the second only chills it.
