Ingredients

  • 2 dashesAngostura Orange Bitters
    Essential for Adonis
    Substitute: Regans' Orange No. 6
  • 1 ozSweet Vermouth
    Italian sweet vermouth
    Substitute: Dolin Rouge
  • 2 ozFino Sherry
    Dry fino sherry
    Substitute: Manzanilla acceptable

Instructions

  1. Add 2 oz fino sherry and 1 oz sweet vermouth to mixing glass
  2. Add 2 dashes orange bitters
  3. Fill with ice and stir gently until chilled

    Light stirring for delicate flavors

  4. Strain into chilled Nick & Nora glass

    Pre-chill glass

  5. Express orange peel oils and garnish

Technique Notes

Serve it genuinely cold in a small glass. This is low in alcohol and drunk slowly, so it warms fast and turns flabby once it does.

Why the Adonis Works

Fino's saline, dry oxidative character is the drink's spine; sweet vermouth supplies the sugar and red-fruit lift that fino lacks. Orange bitters thread between them with citrus that both ingredients already carry in trace, producing one of the lightest, lowest-ABV stirred drinks in the canon.
