Low-ABV sherry and vermouth cocktail

Ingredients

  • 2 dashesAngostura Orange Bitters
    Essential for Bamboo
    Substitute: Regans' Orange No. 6
  • 1 1/2 ozDry Vermouth
    French dry vermouth
    Substitute: Dolin Dry
  • 1 1/2 ozFino Sherry
    Dry fino sherry
    Substitute: Amontillado acceptable

Instructions

  1. Add 1 1/2 oz fino sherry and 1 1/2 oz dry vermouth to mixing glass
  2. Add 2 dashes orange bitters
  3. Fill with ice and stir gently until chilled

    Light stirring for delicate sherry

  4. Strain into chilled coupe glass

    Pre-chill glass

  5. Garnish with lemon twist

Technique Notes

Both wines are perishable once opened. A sherry or vermouth left out for a month makes this taste dull no matter how well you stir it.

Why the Bamboo Works

Stacking two dry, oxidative wines produces a drink that reads almost mineral: fino's almond and saline against the vermouth's herbal. Orange bitters supply the only sweet-aromatic note in the glass. Without them there is nothing to lift the two dry wines off each other and the drink tastes flat and austere; with them it opens into the lightest possible aperitif.
