Ingredients

  • 3/4 ozFresh Lemon Juice
    Fresh squeezed
  • 2 dashesAngostura Aromatic Bitters
The spice in a drink that has no other
    Substitute: Any aromatic bitters
  • 1 1/2 ozGin
    London dry
  • 1 ozSimple Syrup
    Sugar and water 1:1

Instructions

  1. Add 1 1/2 oz gin, 3/4 oz fresh lemon juice, 1 oz simple syrup and 2 dashes Angostura bitters to a shaker
  2. Fill with ice and shake vigorously
  3. Strain over fresh ice in a rocks glass
  4. Garnish with a lemon wheel

Technique Notes

Shake hard and strain over fresh ice. With no egg white and no soda, the bitters do the work a foam or a top-up would do elsewhere, so measure the dashes rather than guess them.

Why the Fitzgerald Works

Lemon and sugar alone make a plain gin sour. Aromatic bitters add clove and cinnamon and dry the finish, so the drink reads as something more than sweet and sour.
