A Hemingway daiquiri pulled toward smoke by half an ounce of Sfumato

  • 1/2 ozGrapefruit Juice
    Fresh
  • 1/2 ozLime Juice
    Fresh
  • 1/2 ozSfumato Rabarbaro
    The whole point of the drink; measure it
    Substitute: No substitution that keeps the smoke
  • 1/4 ozMaraschino Liqueur
    Luxardo or similar
  • 2 ozWhite Rum
    A dry Cuban-style rum
    Substitute: Any light rum
  • 1/4 ozSimple Syrup
    Sugar and water 1:1
    Substitute: Omit for a drier, more Papa Doble reading

Instructions

  1. Chill a coupe
  2. Combine 2 oz white rum, 1/2 oz grapefruit juice, 1/2 oz lime juice, 1/2 oz Sfumato, 1/4 oz maraschino and 1/4 oz simple syrup in a shaker
  3. Shake hard with ice

    Harder than a standard sour; the amaro is dense

  4. Double strain into the chilled coupe and garnish with a lime wheel

Technique Notes

Shake hard and strain it properly cold. Sfumato's smoke sits heavy in the glass, and an under-shaken version reads as ash rather than as the edge of a bonfire.

Why the The Smoke Also Rises Works

The Papa Doble is grapefruit, lime and maraschino with no sugar, and it can read thin. Half an ounce of Sfumato puts smoke and rhubarb underneath it, which gives the citrus something to sit on without making the drink sweet or heavy.
