Sfumato (meaning "smoky" in Italian) is Cappelletti's rabarbaro expression, built around Chinese rhubarb root. Its distinctive smokiness distinguishes it from other amari and makes it a compelling Negroni modifier. Part of the growing interest in rabarbaro-style Italian bitters.
