Ingredients

  • 4 ozFresh Orange Juice
    Squeezed fresh and aerated just before pouring
  • 1 1/2 ozCampari
    Poured over the ice first
    Substitute: Another red bitter, for a softer glass

Instructions

  1. Fill a highball glass with ice
  2. Add 1 1/2 oz Campari
  3. Blend 4 oz fresh orange juice without ice in short pulses until frothy
  4. Pour the juice over the Campari and stir once
  5. Garnish with an orange wedge

Technique Notes

The texture is the whole drink. Dante in New York puts its oranges through a high-speed juicer to order, which aerates the juice as it goes. At home, blend fresh juice without ice in a few short pulses, or use a milk frother, and pour it straight away before the foam settles.

Why the Garibaldi Works

Orange juice brings the sugar and acid that Campari lacks, and the foam softens its bitterness without watering it down. With so little else in the glass, the freshness of the juice decides how good it is.
