Ingredients
- 2 ozCampariCold, poured after the ProseccoSubstitute: Another red bitter aperitivo
- 1 ozSoda WaterA splash, added last
- 3 ozProseccoDry and well chilled, poured over the ice firstSubstitute: Any dry sparkling wine
Instructions
- Fill a wine glass with ice
- Add 3 oz Prosecco
- Add 2 oz Campari
- Top with 1 oz soda water and lift once with a bar spoon
- Garnish with an orange slice
Technique Notes
The proportions are the same as an Aperol spritz, three parts wine to two of bitter, but Campari is more bitter and less sweet, so use a dry Prosecco; the Campari carries enough sugar of its own. Wine first, then the Campari, then the soda. Fill the glass with ice to the rim so the drink stays cold to the last sip without going flat.
Why the Campari Spritz Works
Prosecco and Campari share the orange, and the wine's acidity does the job sugar does in sweeter spritzes: it keeps the bitterness from sitting on the tongue. The soda is only there to thin the mid-palate, which is why a splash is enough.
