Campari and Soda
Cold Campari lengthened with soda in a cold tulip glass, the Milanese original
Ingredients
- 1 ozCampariStraight from the fridgeSubstitute: Another red bitter aperitivo
- 3 ozSoda WaterIce-cold, poured gently
Instructions
- Add 1 oz cold Campari to a tulip glass
Both glass and Campari should be fridge-cold
- Top with 3 oz ice-cold soda water, poured gently down the side of the glass
- Garnish with an orange slice
Technique Notes
No ice. The Campari and the glass both come out of the fridge, and the soda goes in cold. With nothing else in the glass, the temperature is the technique. The orange slice is optional; the drink is often served without one.
Why the Campari and Soda Works
Soda adds nothing but water and carbonation, so this is Campari on its own terms, diluted to a strength that can be drunk in the afternoon. The bubbles lift the orange peel to the nose and the cold holds the bitterness in check, which is why the serve insists on both.
