
Yuzu Spritz
A pale citrus spritz of yuzu sake, prosecco and soda, scented with Japanese yuzu bitters
Ingredients
- 1 1/2 ozYuzu SakeYuzushu, well chilledSubstitute: A yuzu liqueur, using a little less
- 3 dashesYuzu BittersMade from yuzu peel aloneSubstitute: A lemon bitters
- 1 ozSoda WaterWell chilled
- 3 ozProseccoDry and well chilledSubstitute: Any dry sparkling wine
Instructions
- Fill a wine glass with ice
- Add 1 1/2 oz yuzu sake and 3 dashes Yuzu Bitters
- Add 3 oz Prosecco
- Top with 1 oz soda water and lift once with a bar spoon
- Express a lemon peel over the surface and drop it in
Technique Notes
Yuzu sake, sold as yuzushu, is sake blended with yuzu juice and usually sweetened, so it does the job the bitter liqueur does in an Italian spritz. Keep everything cold and add the soda last so the wine keeps its bubbles.
Why the Yuzu Spritz Works
Yuzu sits between lemon and mandarin, tart with a floral edge, and prosecco's own fruit meets it easily. The yuzu sake brings the juice and the sweetness, and the bitters add the peel, which is where most of the aroma is.
