Historical Context
According to its distributor, founder Yuki Yamazaki studied production at the Herman Jansen distillery in Schiedam in 2015 and then spent two years developing his first bitters, yuzu among them. The producer buys the fruit directly from farmers in Tokushima, a prefecture it describes as yuzu-growing country, and suggests the bitters for a gin and tonic, a margarita, a whisky highball or a martini.
What Does The Japanese Bitters Co. Yuzu Bitters Taste Like?
Yuzu zest from nose to finish, bright and tart, in the register between lemon and mandarin. The producer lists only neutral spirit and yuzu peel, so it scents a drink with citrus rather than adding spice or a heavy bitterness.
