Ingredients

  • 2 ozSarti Rosa
    Cold, poured after the Prosecco
Substitute: Aperol, for a more bitter spritz
  • 1 ozSoda Water
    A splash, added last
  • 3 ozProsecco
Dry and well chilled, poured over the ice first
    Substitute: Any dry sparkling wine

Instructions

  1. Fill a wine glass with ice
  2. Add 3 oz Prosecco
  3. Add 2 oz Sarti Rosa
  4. Top with 1 oz soda water and lift once with a bar spoon
  5. Garnish with a lime wheel

Technique Notes

Fill the glass to the brim with ice so the drink stays cold and lively to the last sip. Prosecco goes in first, then the Sarti Rosa, then the soda. Finish with lime rather than orange: its sharpness answers a sweeter, fruit-led aperitivo.

Why the Sarti Spritz Works

Sarti Rosa is sweeter and less bitter than the red aperitivi, so the Prosecco and soda supply the dryness. Lime adds the sharp edge an orange slice would not, and keeps the blood orange and mango from drifting towards fruit juice.
