Modern equal-parts cocktail with mezcal and Aperol

Ingredients

  • 3/4 ozFresh Lime Juice
    Fresh squeezed
    Substitute: Key lime preferred
  • 3/4 ozAperol
    Italian aperitif
    Substitute: Campari for more bitter version
  • 3/4 ozYellow Chartreuse
    French herbal liqueur
    Substitute: Green Chartreuse for more intensity
  • 3/4 ozMezcal
    Espadín mezcal preferred
    Substitute: Del Maguey Vida

Instructions

  1. Add 3/4 oz mezcal, 3/4 oz Aperol, 3/4 oz Yellow Chartreuse, and 3/4 oz fresh lime juice to shaker
  2. Fill with ice and shake vigorously
  3. Double strain into chilled coupe glass

    Pre-chill glass

  4. Serve without garnish

Technique Notes

Equal parts, so measure rather than free-pour. Mezcal is the loudest of the four and the smallest overpour buries the Aperol.

Equal-parts cousin of the Last Word — yellow Chartreuse where green sat, mezcal where gin was, Aperol replacing maraschino. Mezcal's smoke and Aperol's bittersweet citrus are unexpectedly compatible because both carry caramelised sugar in their cores; lime is the acid that holds them apart.
