Number of people

Ingredients

  • 4 ozTonic Water
    Well chilled
Substitute: Soda water for a drier glass
  • 1 1/2 ozRamazzotti
    Sweet, orange-forward amaro
    Substitute: Any medium-bodied amaro

Instructions

  1. Fill a highball glass with ice
  2. Add 1 1/2 oz amaro
  3. Top with 4 oz tonic, stir gently and express an orange twist over the top

Technique Notes

Build in the glass and stir once. The tonic is the dilution, so a second stir only knocks the bubbles out and leaves it flat.

Why the Amaro Highball Works

Tonic stretches a sweet amaro into an easy aperitivo; its quinine echoes the amaro's gentian while the orange twist lifts the citrus. Use a neutral tonic so the amaro stays in front.
