- 1 ozLillet BlancFrench aperitif wineSubstitute: Cocchi Americano
- 1 ozGinLondon Dry ginSubstitute: Plymouth gin
Instructions
- Add 1 oz gin, 1 oz Suze, and 1 oz Lillet Blanc to mixing glass
- Fill with ice and stir until well chilled
- Strain over large ice cube in old fashioned glass
- Express lemon peel oils over drink and garnish
Technique Notes
Suze is drier and more assertive than Campari, so stir a touch longer. The extra water is what stops the gentian dominating.
Why the White Negroni Works
Gentian (Suze) replaces Campari's bitter orange; Lillet Blanc's floral-fruit replaces sweet vermouth's red-spice. The result is the same botanical-bitter-sweet Negroni structure, translated into a paler, drier, more floral key. Gin remains the connector because its botanicals overlap with both modifiers.
