
Ingredients
- 2 ozBourbon WhiskeyNinety proof or betterSubstitute: A brandy, rum or gin, per the producer
- 2 dashesTrinity BittersThree of the house bitters, rested together for a monthSubstitute: Any all-purpose aromatic bitters
- 1/4 ozMaple SyrupThe whole sweetener
Instructions
- Add 2 oz bourbon, 1/4 oz maple syrup and 2 dashes Trinity bitters to a rocks glass
- Add a large cube and stir until cold
One large cube; maple thins faster than sugar syrup
- Express a lemon peel over the surface and drop it in
Technique Notes
Ninety proof or better, because maple is heavier than sugar syrup and a forty percent bourbon disappears underneath it. A quarter ounce is the whole sweetener.
Why the Trinity Old Fashioned Works
Maple and an oak-rested bitters are the same flavour arriving twice, which is usually a mistake and here is the design. Trinity carries dried fruit and vanilla from its cherry-bark component, and the maple meets that instead of arguing with it.
