    Fresh squeezed
  • 2 ozBlanco Tequila
    A clean, unaged tequila
  • 1 dashScrappy's Fire Tincture
Very hot; add it a dash at a time
    Substitute: Hella Smoked Chili Bitters
  • 1/2 ozCointreau
    Substitute: Any triple sec
  • 1/2 ozAgave Syrup
    Substitute: Simple syrup

Instructions

  1. Add 2 oz blanco tequila, 1 oz fresh lime juice, 1/2 oz Cointreau, 1/2 oz agave syrup and 1 dash Scrappy's Fire Tincture to a shaker
  2. Fill with ice and shake vigorously
  3. Strain over fresh ice in a rocks glass
  4. Garnish with a lime wheel

Technique Notes

The tincture is very hot. Taste after the first dash and add more only if the drink needs it. A tincture gives the same heat every time, where muddled chile changes with each pepper. Shake and strain over fresh ice.

Why the Spicy Margarita Works

Habanero has a fruity edge that suits lime and orange, and its heat arrives after the citrus rather than over it. Agave keeps the sweetness in the tequila's own register.
