  • 2/3 ozFresh Lemon Juice
    Fresh squeezed
    Substitute: Meyer lemon
  • 1 wholeEgg White
    For silky foam texture
    Substitute: Aquafaba for vegan
  • 2 ozSonnema Berenburg
    Traditional Frisian herbal liqueur
    Substitute: Weduwe Joustra Berenburg
  • 1/3 ozSimple Syrup
    Light simple syrup 1:1
    Substitute: Rich syrup at half amount

Instructions

  1. Add 2 oz Sonnema Berenburg, 2/3 oz fresh lemon juice, and 1/3 oz simple syrup to shaker
  2. Add 1 egg white
  3. Dry shake vigorously without ice

    Essential for foam

  4. Add ice and shake again vigorously
  5. Strain into tumbler over fresh ice
  6. Garnish with lemon slice

Dry shake without ice first for foam, then shake with ice and strain

Why the Sonnema Sour Works

Sonnema Berenburg is a Frisian herbal jenever bitter, already complex with juniper, gentian, and bay. The sour structure around it is deliberately spare. Egg white smooths the herbal edge; lemon and a small amount of simple syrup bracket the bitterness without competing with it. The drink is the spirit, framed.
