A smoky-rhubarb spritz: rabarbaro amaro, sparkling wine and soda

  • 3 ozProsecco
    Well chilled
    Substitute: Any dry sparkling wine
  • 1 ozSoda Water
    A splash to lift
  • 2 ozRabarbaro Zucca
    Smoky rhubarb amaro
    Substitute: Sfumato Rabarbaro

Instructions

  1. Fill a wine glass with ice
  2. Add 2 oz rabarbaro amaro, then 3 oz prosecco
  3. Add a splash of soda and garnish with a grapefruit half-wheel

Technique Notes

Wine before soda, always. Soda first makes the wine foam over the rim and you lose the carbonation you were building.
