  • 1 1/4 ozPunt e Mes
    The Torino half, and the reason the drink is not just an Americano
    Substitute: Another bittered vermouth di Torino
  • 1 1/4 ozItalian Red Bitter
    The Milano half; the producer does not name a brand
    Substitute: Any red bitter aperitivo
  • 1 ozSoda Water
    Optional, and only if you want it longer

Instructions

  1. Fill a low tumbler with ice
  2. Add 1 1/4 oz Punt e Mes and 1 1/4 oz red bitter
  3. Stir delicately, then add a splash of soda if you want it longer

    Briefly, and for temperature only; the drink was mixed as it poured

  4. Garnish with an orange peel

Technique Notes

Stir it briefly and no more. Both halves arrive already bitter and already sweet, so there is nothing to integrate; the stirring is for temperature, and every extra turn dilutes a drink that was mixed the moment it was poured.

Why the Mi-To Works

Milano and Torino, which is where the name comes from: a red bitter from one city and a bittered vermouth from the other, in equal measure. Punt e Mes brings its own bitterness rather than the sweetness a normal vermouth would, so the drink lands drier than an Americano built the usual way.
