Two parts fresh orange juice to one of Galliano's bitter aperitivo

  • 1 3/4 ozGalliano L'Aperitivo
    One third of the glass, and all of the bitterness
    Substitute: Another citrus-led red aperitivo
  • 3 1/2 ozOrange Juice
    Squeezed; Valencia is the classic, blood orange the prettiest

Instructions

  1. Fill a glass with ice
  2. Add 1 3/4 oz Galliano L'Aperitivo
  3. Squeeze the oranges and add 3 1/2 oz of the juice

    Valencia is the classic; blood orange changes the colour

  4. Stir once and garnish with a slice of orange

Technique Notes

Squeeze the oranges. This is a two-ingredient drink in which one ingredient is orange juice, so there is nowhere for a carton to hide; Valencia is the classic choice and blood orange is the one that changes the colour.

Why the L'Aperitivo Orange Works

Most red aperitivos lead with one bittering root and let the citrus decorate. Galliano reverses that, stacking six Mediterranean citrus fruits at the front, so orange juice does not cover the drink so much as continue it.
