Ingredients

  • 1/2 ozFresh Lime Juice
    Fresh squeezed
    Substitute: Key lime preferred
  • 1 1/2 ozFresh Pineapple Juice
    Fresh pineapple
    Substitute: Quality canned acceptable
  • 3/4 ozCampari
    Italian bitter aperitif
    Substitute: Aperol lighter version
  • 1 1/2 ozDark Rum
    Jamaican dark rum
    Substitute: Demerara rum
  • 1/2 ozSimple Syrup
    Rich simple syrup
    Substitute: Demerara syrup

Instructions

  1. Add 1 1/2 oz dark rum, 3/4 oz Campari, 1 1/2 oz fresh pineapple juice, 1/2 oz fresh lime juice, and 1/2 oz simple syrup to shaker
  2. Fill with ice and shake vigorously
  3. Strain over fresh ice in old fashioned glass
  4. Garnish with pineapple wedge

Technique Notes

Fresh pineapple juice or nothing. The foam on top comes from the fresh juice, and canned juice gives you a flat, sweeter drink.
