
Ingredients
- 1/2 ozFresh Lime JuiceFresh squeezedSubstitute: Key lime preferred
- 1 1/2 ozFresh Pineapple JuiceFresh pineappleSubstitute: Quality canned acceptable
- 3/4 ozCampariItalian bitter aperitifSubstitute: Aperol lighter version
- 1 1/2 ozDark RumJamaican dark rumSubstitute: Demerara rum
- 1/2 ozSimple SyrupRich simple syrupSubstitute: Demerara syrup
Instructions
- Add 1 1/2 oz dark rum, 3/4 oz Campari, 1 1/2 oz fresh pineapple juice, 1/2 oz fresh lime juice, and 1/2 oz simple syrup to shaker
- Fill with ice and shake vigorously
- Strain over fresh ice in old fashioned glass
- Garnish with pineapple wedge
Technique Notes
Fresh pineapple juice or nothing. The foam on top comes from the fresh juice, and canned juice gives you a flat, sweeter drink.
