Ingredients

  • 2 dashesWynand Fockink Orange Bitters
    Sweet and bitter orange, lightly spiced
    Substitute: Any orange bitters
  • 4 ozTonic Water
    Ice-cold, added last
  • 1 1/2 ozGenever
    Jonge genever, the young and lighter style
    Substitute: Oude genever, for a maltier glass

Instructions

  1. Fill a highball glass with ice
  2. Add 1 1/2 oz genever and 2 dashes Wynand Fockink Orange Bitters
  3. Top with 4 oz tonic water and lift once with a bar spoon
  4. Express an orange peel over the surface and drop it in

Technique Notes

Use jonge genever, the young style, rather than oude. It is closer to gin in weight and keeps the tonic and the orange bright, where the extra malt wine in an oude makes a heavier, breadier glass.

Why the Genever and Tonic Works

Genever's malt wine gives a tonic more body than gin does, and orange bitters answer the quinine with fruit rather than more bitterness. Wynand Fockink's version leans sweet and spiced, which suits genever's bready side better than a dry, peel-only orange bitters would.
