Ingredients

  • 1 ozAmaro dell'Erborista
    Unfiltered and honey-sweetened; it goes in first
    Substitute: Another honey-sweetened amaro
  • 4 ozProsecco
    Cold, and poured slowly down the side
    Substitute: Any dry sparkling wine

Instructions

  1. Chill a champagne flute
  2. Pour in 1 oz Amaro dell'Erborista

    The amaro first; it is heavier than what goes on top

  3. Top with 4 oz cold prosecco
  4. Express a grapefruit twist over the surface

Technique Notes

Chill the flute first and pour the amaro before the prosecco. Amaro dell'Erborista is unfiltered and heavier than what goes on top of it, so pouring in the other order leaves a dark layer sitting on the bottom that never comes up.

Why the Dell'Erborista Spritz Works

Honey is a heavier sweetener than sugar and carries flavour of its own, which is why this amaro reads rounder than its bitterness alone would suggest. Prosecco is dry and sharp enough to cut it, and grapefruit oil picks up the resinous edge the honey rounds off.
