A rich amaro sour with lemon and a silky egg-white top

  • 3/4 ozLemon Juice
    Fresh
  • 1Egg White
    For texture
    Substitute: Aquafaba for a vegan version
  • 2 ozAmaro Abano
    Warm-spiced amaro
    Substitute: Any aromatic amaro
  • 1/2 ozSimple Syrup
    Adjust to the amaro's sweetness

Instructions

  1. Add amaro, lemon juice, simple syrup and egg white to a shaker and dry shake without ice
  2. Add ice and shake again until well chilled
  3. Double strain into a chilled coupe and express an orange peel over the foam

    Serve chilled

Match the syrup to your amaro. These vary from bone-dry to almost sweet, so a fixed measure will land wrong on half the bottles you try.
