Ingredients

  • 0.7 ozUnderberg
One 20ml bottle, at room temperature

Instructions

  1. Take one 2/3oz bottle at room temperature

The producer suggests roughly 7 to 20 degrees; not chilled

  2. Peel back the straw-paper wrapper and open the bottle
  3. Drink it in one, straight from the bottle or from a small glass

Technique Notes

Room temperature, and all at once. The label says so itself, and the reason is structural: this is thirty-odd botanicals at concentration, and sipping it stretches the bitterness over a minute instead of a second.

Why the Underberg Works

There is nothing to pair here, which is the point. The single-portion bottle removes every decision a drinker normally makes about measure, temperature and dilution, and what is left is one concentrated mouthful of herbs after a meal.
