    Substitute: Simple syrup acceptable

Instructions

  1. Fill Collins glass with ice
  2. Add 6 dashes non-alcoholic lavender bitters, 1 oz fresh lemon juice, and 3/4 oz honey syrup
  3. Stir to combine lemon and honey
  4. Top with 4 oz soda water and stir gently

Technique Notes

Taste before you pour. Lemon sweetness varies enough that a fixed syrup measure will land differently on any two batches, and lavender turns soapy the moment it is over-sweetened.

Why the Lavender Lemonade Works

A floral non-alcoholic cooler that uses lavender bitters to lift simple lemonade into something genuinely complex. The honey syrup bridges the floral and citrus elements, creating a mocktail with real structural sophistication.
