
Génépy on the Rocks
The Savoyard close to a meal: alpine génépy over one big cube, nothing else
Ingredients
- 1 1/2 ozGénépy le ChamoisPoured over one large cubeSubstitute: Another alpine génépy
Instructions
- Put one large cube in a rocks glass
- Pour 1 1/2 oz Génépy le Chamois over it
- Leave it a minute before the first sip and let the cube do its work
Technique Notes
One large cube rather than a glass full of small ones. The pour is built to open slowly as it waters down, and crushed ice takes the herbs apart inside a minute.
Why the Génépy on the Rocks Works
Génépy sits between chartreuse and absinthe: sweeter and rounder than the second, lighter and less peppery than the first. Neat it reads syrupy, and a single cube of dilution is what opens the alpine herbs out without turning the glass watery.
