The Abruzzo meditation pour: emerald, seventy percent, and cold

Number of people

Ingredients

  • 3/4 ozToro Centerbe
A modest pour, straight from the freezer
Substitute: Another high-proof Italian herbal liqueur

Instructions

  1. Take the bottle from the freezer

Cold; the tradition is emphatic about it

  2. Pour 3/4 oz into a small glass
  3. Take in the aroma before drinking, then wet the lips before the first real sip

A liquore da meditazione; the measure is meant to be modest

Technique Notes

Cold from the freezer and poured short. At seventy percent this is the strongest thing in the catalog by a wide margin, and the tradition is explicit that the measure is a modest one; the glass is small on purpose and refilling it is not the idea.

Why the Centerbe Works

Nothing pairs with this and nothing needs to. At seventy percent the alcohol is doing what water does in a longer drink, carrying the mint and the mountain herbs straight to the top of the palate, which is why the tradition asks you to smell it before you taste it.
