The classic Spanish carajillo — hot espresso cut with Licor 43, served over ice or warm

Ingredients

  • 1 ozEspresso
    Freshly pulled, hot
    Substitute: Strong moka-pot coffee
  • 1 ozLicor 43
    Vanilla-and-citrus Spanish liqueur
    Substitute: Brandy or dark rum for a traditional carajillo

Instructions

  1. Pour 1 oz Licor 43 into a rocks glass, over ice for the iced version
  2. Pull 1 oz hot espresso and pour it gently over the Licor 43

    Hot espresso over cold liqueur

  3. Express an orange twist over the top and drop it in

Technique Notes

Layer chilled Licor 43 under hot espresso, or shake with ice for the iced version

Why the Carajillo Works

Licor 43's vanilla and citrus soften espresso's edge into something dessert-like; serve it iced in summer, warm in winter. Use a good espresso — at two ingredients, there is nowhere to hide.
