Instructions
- Fill a highball with ice and pour 1 1/2 oz Vecchio Amaro del Capo straight from the freezer
Caffo holds the bottle at twenty degrees below zero
- Top with 4 oz cold tonic, poured down the side of the glass
- Stir once and garnish with an orange slice
Technique Notes
Keep the bottle in the freezer rather than the fridge. Caffo pours this at twenty below, and that cold is what turns a sweet, mint-heavy amaro into something crisp enough to drink at length.
Why the Capo Tonic Works
Amaro del Capo is sweeter and mintier than most Italian amari, which makes it awkward neat at room temperature and excellent at freezer strength. Tonic's quinine picks up the bitter side the sugar hides, and the orange slice answers the citrus already in the infusion.
