A French cafe aperitif: quinquina wine with cassis and soda

Ingredients

  • 3 ozSoda Water
    Well chilled
  • 1/2 ozCreme de Cassis
    Blackcurrant liqueur
  • 2 ozByrrh Grand Quinquina
    Quinquina wine aperitif
    Substitute: Any quinquina or Cocchi Americano

Instructions

  1. Fill a wine glass with ice
  2. Add 2 oz Byrrh and 1/2 oz creme de cassis
  3. Top with 3 oz soda, stir gently and garnish with a lemon twist

Technique Notes

Cassis first, then Byrrh, then soda. Cassis is dense and sinks, so pouring it last leaves it sitting under everything unmixed.
