  • 1/2 ozGrenadine
    Real pomegranate grenadine
Substitute: Poured slowly to create sunrise effect

Instructions

  1. Fill Collins glass with ice
  2. Add 6 dashes non-alcoholic orange bitters and 4 oz fresh orange juice
  3. Top with 2 oz soda water and stir briefly
  4. Slowly pour 1/2 oz grenadine down the side of the glass to create sunrise gradient effect

    Pour slowly for visual effect

Technique Notes

Pour the grenadine last and do not stir it in. The gradient is the whole visual, and it holds only if the syrup is allowed to sink on its own.

Why the Bitter Sunrise Works

A non-alcoholic riff on the Tequila Sunrise structure, using non-alcoholic orange bitters to add depth and complexity to orange juice and grenadine. The bitters transform what would be a simple juice drink into something with genuine cocktail character.
