Ingredients

  • 1 lb (1.0 lb) Fresh Strawberries
    Ripe in-season strawberries, hulled and quartered
  • 1 tsp (4.9 ml) Orange Zest
    Freshly grated
  • 2 oz (59.1 ml) Campari
    The essential bitter-orange component
  • 3 tbsp (44.4 ml) Caster Sugar
    Fine sugar dissolves into the juices

Instructions

  1. Hull and quarter 1 lb of ripe strawberries into a mixing bowl
  2. Add 3 tbsp caster sugar, 2 oz Campari, and 1 tsp freshly grated orange zest
  3. Toss gently with a rubber spatula until sugar begins to dissolve
  4. Cover and refrigerate for 30 minutes to 2 hours, stirring once halfway through, until fruit releases its juices

    Serve cold

  5. Spoon over vanilla gelato, panna cotta, mascarpone, or pound cake; garnish with a mint leaf
